Saltlicker Cocktails

SALTED CIDER Sprinkle a dash of Saltlickers’ Smoker Licker into your cider, beer, lemonade, tea, etc.


SIMPLE SYRUPS v1

We’ll be using Lavanilla, a special custom blend with lavender and vanilla that I made for this class. Match your booze to the syrup. Brown or clear alcohol would pair with the lavender vanilla syrup. We’ll also see how brown sugar affects the syrup.


INGREDIENTS Sugar and Saltlickers

Place a 1:1 ratio of water to sugar in a small pot. One 2 oz Saltlickers jar contains ¼ cup, so put that in a pot with ¼ cup water. Heat to medium high, stirring until all the sugar is dissolved. Let it cool. Strain if there’s sediment. Store it in a glass container in the refrigerator for 2 to 3 weeks.


The ratio for a well-balanced cocktail is 2:1:1:2 or 3 is 2 booze : 1 simple syrup : 1 lemon juice : 2 or 3 mixer like seltzer or Fresca.


Example for 2 people: 2 shots of booze + 1 shot simple syrup + 1 shot lime + 2 or 3 shots mixer.

Example for 1 person: 1 shot of booze + ½ shot simple syrup + 1/2 shot lime + 1 or 2 shots mixer.


SIMPLE SYRUP v2, with HERBS

Plain sugar

½ tbsp. crushed ginger

1 tbsp chopped mint


Great for clear liquor, rum, tequila, etc.



THE PERFECT PUNCH Any kind of liquor would work here, depending on your mix. There are 5 must-haves for the perfect punch.

· Sweet (simple syrup)

· Sour (lemon/lime juice, tonic water)

· Neutral mixer (seltzer, water, milk!)

· Bitter (bitters)

· Booze

6 cups alcohol (we’ll put ours in at the end)

2 cups lime juice 2 cups Cha-cha Lima simple syrup or a two-cup mix of simple syrup & sweet soda, juice, etc. 2 cup neutral mixer (use more for boozier punches, less for a blow out) 2 tsp bitters Bag of ice

S’MORES JELL-O SHOTS WITH COCO CORAZÓN

Bag of marshmallows

1 cup warm water + 1/4 cup Coco Corazón

2.5 packets of gelatin

1.5 c chocolate vodka

Everclear if fire’s on the menu


Combine Coco and warm water together in a pot on the stove and mix well. You may have to turn the heat on the stove on to dissolve the spices a bit. Let cool if necessary for about 5 minutes, sprinkle gelatin over the mix, and let it sit 5 minutes. Turn the stove back to medium high on and whip the gelatin until its dissolved, scarping the bottom of the pan and the sides. Once blended, slowly pour in the vodka and stir.


Let it cool 30 minutes. Using a funnel, fill the marshmallows and chill at least 1 hour in the fridge. Dust with more Coco Corazón or drizzle with chocolate syrup if you wish. For serving, spray with Everclear light them on fire with a kitchen torch and sandwich them between graham crackers!
