No Grain Granola

· 1-1/2 cups unsweetened coconut flakes

· 1 cup hand chopped almonds (or use food processor)

· ¾ cup raw pumpkin seeds

· ½ cup sesame seeds

· ½ tsp. salt

· ½ tsp. ground cinnamon

· 1/8 tsp. ground cardamom

· ½ tsp. ground ginger

· 1 Tbsp. + 1 tsp. olive oil

· ¼ cup honey or maple syrup

· 1 tsp. vanilla extract


1. Grate one orange rind.

2. Preheat oven to 300 degrees F.

3. Line rimmed baking sheet with parchment paper.

4. Toss all the dry ingredients in a large bowl.

5. Mix all the wet ingredients together and heat in microwave until easily pourable.

6. Mix the dry and wet ingredients together and spread the mixture evenly on the baking sheet.

7. Bake for 20 minutes until the mixture turns golden-brown, turning the sheet after 10 minutes and stirring.

8. Remove and cool for 15 to 20 minutes.

Recipe Notes:

Lasts for a week to 10 days. Store tightly in a container.
