2 tablespoons olive oil
1/4 cup diced onions or shallots
1 cup Arborio Rice
2 cups Chicken Broth
1/4 cup white wine
1/4 cup grated Parmesan Cheese
1 tablespoon fresh minced parsley
1. Add olive oil to multicooker. Use Brown or Saute setting to saute onions and rice until translucent, about 5 minutes. Turn off setting.
2. Add broth and wine. Close lid and turn knob to pressure.
3. When done, stir in cheese and parsley. Serve!
Feel free to add other items in like 1 teaspoon of saffron threads prior to pressure cooking. Peas or mushrooms also create a delicious dish.
