Mint Limeade & 2x Crostinis

Grilled Cherry & Brie Crostini

Serving Size: 3-4 servings


2 cups cherries, pitted & halved

1 tablespoon balsamic vinegar

1 tablespoon olive oil

4 oz triple cream Brie cheese

1 small baguette, sliced

4 basil leaves, chiffonade


1. Carefully pit the cherries with a cherry pitter, and then toss with olive oil and balsamic vinegar.

2. Place the pitted cherries in a cast iron skillet and pan grill for 4-5 minutes. Turn while grilling until Cherries are warmed.

3. Meanwhile, brush slices of bread with olive oil and grill or toast for 1-2 minutes. Spread the triple cream Brie cheese onto the grilled bread and top with warm cherries. Garnish with fresh basil.

Citrus Avocado Puree Crostini

Serving Size: 3-4 servings


1 large ripe avocado

3 1/2 oz cream cheese

1 garlic clove

1 tablespoon olive oil

Juice of 1/2 lime


1 small baguette, sliced


1. Puree avocado with 3 1/2 oz cream cheese.

2. Put in food processor with garlic, olive oil, lime juice, salt

3. Spoon mixture on top of crostini and garnish with finely chopped chives, strip of lime or zest, or 1/2 a roasted cherry tomato.

Recipe Notes

Can replace the lime zest with lemon juice and zest with tabasco sauce if you prefer

For Roasted Cherry Tomato, place 10 halves of cherry tomatoes on a baking sheet, drizzle with oil, then scatter sugar, salt and pepper. Place into a preheated oven of 350 degrees for 30 minutes or until tomatoes are tied out and slightly caramelized.

Mint Simple Syrup


Equal parts 1:1 water and granulated sugar

8 Mint Sprigs


1. Bring water to a boil to let the sugars dissolve with mint

2. Cool down completely. Once cooled, strain mint and seal in canning jar.

Recipe Notes:

Make syrup ahead of time, add 1 tsp of vodka and store up to 6 months.

Mint Limeade


1/2 cup lime juice, freshly squeezed

1/2 cup simple syrup

1 cup water or fizzy beverage, cold

3 tablespoon mint, finely chopped


1. Mix ingredients together and serve on ice.
