Homemade Salad Dressings

Caesar Salad

· 3-4 Romaine hearts cut in half lengthwise

· Block of parmesan cheese

· Fresh cracked pepper

· Caesar dressing

· Croutons

Caesar Dressing

· 2 Tablespoons lemon juice, (juice of one lemon)

· 4-5 Anchovies packed in oil

· 1 Tablespoon Dijon Mustard

· 1 clove garlic

· 1/4 teaspoon salt

· 1 egg yolk

· 1-2 Tablespoons Olive Oil

· 1-2 Tablespoons Safflower oil, (or other light oil)

· 2-3 Tablespoons grated Parmesan Cheese

· Fresh pepper


1. On a cutting board smash garlic and press with the tip of your knife until a paste forms, adding 1/4 teaspoon of sea salt helps to form the paste. Add the anchovies and continue to press until uniform.

2. In a large mixing bowl add the garlic/anchovy paste, egg yolk, mustard lemon juice, and a little pepper. Whisk together well. While whisking add Olive Oil a drop at a time until incorporated. Continue to whisk and slowly add Safflower oil until completely combined and homogenous. Mix in Parmesan cheese and more freshly cracked pepper.


1. Tear slices of hardy white bread, (sourdough, ciabatta, baguette) into bite sized pieces. Spread on sheet pan and drizzle with olive oil. Bake in a hot oven, 375, for 15-25 until just golden brown. Stir once during cooking. Set aside to cool.

2. To assemble salad; take half the dressing and coat each half of the romaine. Take reserved dressing and coat the croutons. Serve on a platter topping with shards of fresh parmesan cheese and cracked pepper

Honey Mustard Dressing

· 1 clove garlic

· 1 Tablespoon Dijon Mustard

· 1 Tablespoon Honey

· 3 Tablespoons Honey Ginger vinegar, or other white vinegar

· 3+ Tablespoons Olive Oil


1. Put garlic through a garlic press, or mince. Mix together garlic, salt, mustard, honey and vinegar in a medium mixing bowl until well combined. Drizzle olive oil into bowl while whisking.

Italian Dressing

· 1/2 Cup Red wine vinegar

· 1/2 cup olive oil

· 2 Tablespoons Honey

· 1 Tablespoon Dijon Mustard

· 1 Teaspoon Italian Seasoning

· 1/2 teaspoon Garlic powder

· Salt and Pepper
