1 lb. Chicken 1 Small Onion, diced 2 ¼ cup Mayo 1 ½ cup Mango Chutney 1 Apple, diced 3 Tbsp Lemon Juice ½ tsp Salt 2 cup Golden Raisins 1.5-2 Tbsp Curry Powder ½ cup Toasted Almond Slices 3 Green Onions (Spring Onions), chopped 1 Lettuce 1 Loaf French bread
1. Cut the chicken up and fry in olive oil.
2. About half-way through add the diced onion and continue until the chicken is fully cooked.
3. Simply mix everything (except the almonds and green onions) thoroughly and spread on lightly toasted diagonal slices of French bread.
4. Garnish with the green onions and almond slices. Serve on a small plate and garnish with lettuce.
