Cauliflower Sauce

Perfect healthy alternative to the traditional Alfredo Sauce for pastas. This also makes a great cheddar cheese sauce! Just switch out the parmesan for cheddar, or better yet, use both!
Ingredients:
1 large head of Cauliflower
3 tablespoons olive oil
3-4 cloves of garlic
1 + cup of shredded parmesan cheese
4 cups chicken or vegetable stock (Can use water)
2 teaspoons salt
Pepper
Directions:
1. Rough chop cauliflower and place in stock pot. Cover with stock, add salt. Bring to a boil, and reduced heat to simmer. Cook until cauliflower is tender.
2. While cauliflower is cooking, sauté garlic in olive oil over low to medium low heat. Do Not Burn! Garlic should be soft and slightly browned.
3. Place cauliflower in blender and pour over enough liquid to just cover. Blend slowly increasing speed to high. Add more liquid to reach desired consistency. Add garlic and the oil while the blender is running. Add cheese, and blend to combine.
4. Salt and pepper to taste.
