Banana Coffee Chocolate Chip Bars

2 sticks unsalted butter

1 ½ cups packed brown sugar

2 ripe bananas, mashed

1 tbsp hot water

2 tbsp instant coffee granules

2 eggs

1 tsp vanilla extract

2 cups all-purpose flour

½ tsp baking soda

1 tsp salt

2 cups semisweet chocolate chips


1. Preheat oven to 350 degrees and grease a 9x13 baking pan

2. Melt the butter in the microwave or over the stove in a sauce pan. In a small dish, dissolve the

instant coffee in the hot water. In a medium bowl whisk together the melted butter, dissolved

coffee, brown sugar, mashed bananas, eggs, and vanilla.

3. In a large bowl whisk together the flour, baking soda, and salt.

4. Stir the wet and dry ingredients together until the flour is all incorporated. Gently fold in the

chocolate chips.

5. Pour and spread evenly into the greased baking pan. Bake for 30 minutes. Cool completely

before slicing.
