Avocado & Grapefruit Salad w/ Pineapple Lime dressing

This salad is cool and refreshing, and at the same time rich and creamy. Enjoy an added crunch with pistachio nuts, or try toasted Pepitas. A great salad anytime you have a good avocado!
Ingredients
2 large Ruby Red Grapefruits
1 ripe avocado sliced
1-2 Tablespoon Pistachio nuts
Pineapple Lime Dressing Ingredients
1 Tablespoon dijon mustard
1 Tablespoon honey
1/4 teaspoon citrus dill salt
1 Tablespoon Pineapple vinegar
1/2 teaspoon freshly cracked pepper
1-2 Tablespoons Lime oil
Instructions
For the Pineapple Lime Dressing
In a mixing bowl using a whisk, combine all ingredients except oil. Whisk together until combined.
While whisking slowly stream Tahitian Lime olive oil until smooth and creamy. I start with 1 Tablespoon and if dressing is toothpick and more until you reach the consistency that you like.
To assemble the salad
Section the grapefruit by removing the outer peel with a sharp knife. Run the knife between each section next to the membrane, section will come out easily

Slice the avocado and place on a plate intermixed with the grapefruit sections. Drizzle dressing over. Top with Pistachios.
Recipe Notes
This dress can easily be adapted by changing the flavors of Oil and Vinegar. Try Vine ripened Raspberry balsamic w/ Sicilian Lemon olive oil, or Summer Peach w/ Blood Orange!
