Apple Pie

Ingredients:
Filling
5 cups of slice apples ( I use two or three different kinds) 3. Tablespoons of Tapioca
3/4 cup white sugar
~2 Tablespoons butter
Cinnamon
Crust 2 cups of unbleached flour (I use Gold Medal) 1/2 teaspoon of salt 2/3 plus 2 tablespoons of Crisco. ( I measure from the stick kind)
Ice cold water
Directions:
1. Mix tapioca and sugar with sliced apples. Let stand while you make the crust.
2. Chop the shortening into the flour until small pea size crumbles. 3. Get a container of ice cubes and pour water over them. 4. Very carefully put small amounts of water into the flour and mix with hands until just barely mixes together. Don't put too much water or it will be tough. 5. Pat dough into a round and divide in half. 6. Roll dough between wax paper. 7. Put dough into pie plate, add apple mixture, add butter or oleo bits on apples ( about two tablespoons or less) sprinkle with Cinnamon. Roll dough on top of pie. Decorate top crust. Add a little butter on top of crust and sprinkle with sugar. 8. Cut around edge of crust and crimp. 9. Bake in Convection oven 400 degrees for 25 minutes and then 350 degrees for 20 min. 10. Bake in regular oven 425 degrees for 25 minutes and then 350 degrees for 20 minutes. You may need to cover the edges the last minutes if baked in regular oven.
